Place all ingredients into a blender (one with an s-shaped blade)
Blend until all ingredients are combined (add extra olive oil if needed)
Taste, and add extra seasonings if required.
To serve, warm gently in a saucepan for a couple of minutes before adding to your meal.
Will store in the fridge, in a sealed container, for up to 1 week. For variation, experiment with using different leaves, herbs, pine nuts, other nuts... This pesto tastes amazing served over gluten free pasta, meat, or fish. Or you could even add it to steamed vegetables.
